Recipe: Veggie Fajitas

So, what is for dinner tonight? It can often be difficult to prepare meals during the week due to work, scheduled plans and activities. We lack time, or have fussy kids, and often turn to convenience to get food on the table.

This recipe for veggie fajitas is quick and easy, and allows you to get a few more servings of vegetables into your diet.

Veggie Fajitas


  • 1 {16 oz} can black beans (drain and rinse)\
  • 1 sweet pepper sliced (red, yellow, purple, or green)
  • 1 onion, sliced
  • 1 zucchini, sliced
  • 1/2 bunch cilantro, chopped
  • 1/2 tsp cumin
  • 1/2 tsp chili powder
  • 1 garlic clove, minced
  • 2 Tbsp olive oil
  • 1/2 tsp sea salt
  • 1/4 tsp pepper
  • Tortillas or rice or lettuce leaves


Heat a medium-sized skillet with oil and saute vegetables until almost done. Add all the spices and saute for a few minutes more. Remove from heat and add a little chopped cilantro. Serve with tortillas or over a bed of rice or in lettuce leaves.

This base recipe is easy to add to: different veggies, tofu, chicken, lean beef, shrimp, etc. To make it more kid-friendly, add grated cheese, salsa, and Greek yogurt to the table that they can add on top.
