Holistic Nutrition Recipe: Stampede Pancake Breakfast

As we head into the opening weekend of the Calgary Stampede, the invitations to parties, pancake breakfasts and rodeo events seem endless. Vendors along the Stampede Midway try to top each other with the most outrageous and deep fried food to tempt visitors and expand their waistlines.

Your typical Stampede Breakfast is no different. Hundreds line up for white refined flour pancakes turned soggy from chemical-laden sugary syrups. No matter how many spins you take around the dance floor at Nashville North, no two-step is going to combat that belly bloat.

Take the menu into your own hands and make your Stampede Breakfast known for the food, for all the right reasons.

Holistic Nutrition Recipe: Banana Pecan Pancakes
Yield: six pancakes
Serves three

Ingredients

3 large eggs
1 Tbsp grass fed butter, melted
1/4 cup unsweetened almond milk
1 tsp vanilla extract
1/4 tsp cinnamon
1/8 tsp nutmeg
1/8 tsp unrefined sea salt
3 Tbsp coconut flour
1/4 tsp baking soda
1/2 medium banana
1 oz raw pecans, chopped

Instructions

In a medium bowl, mix together eggs, milk, butter, vanilla, cinnamon, nutmeg and salt.
Stir in coconut flour and baking soda. If batter is to thick you can thin it out with a little more milk.
Stir until there are no lumps left.
In a small bowl mash the banana well. Add to pancake batter and mix.
Heat a skillet over medium and grease with coconut oil.
Pour batter into hot skillet and add pecans to each pancake.
Flip when pancake is slightly browned.
